: The study design adhered to the ethical principles of the Declaration of Helsinki and participant privacy and data security were strictly protected. All participants were informed about the study and participated voluntarily. The wine was the same used by the winery. The yeast strains used are GRAS and already used in wine fermentation. In addition, the final wine products were filtered and added with sulphur dioxide, which, together with the alcohol content, provided the microbiological safety of the wines.
