: The Committee of Bioethics of the Institute of Biomedical Researches of the University of Carabobo (BIOMED-UC) approved the project, which was carry out following the guiding principle for humans and animals carefulness by the Commission of Bioethics of the Ministry of Science and Technology and the “Operational Guidelines for Ethics Committees that Review Biomedical Research (TDR/PRD/ETHICS/2000.1). Informed consent was requested and signed by the participant who donated a blood sample for DNA extraction, as a control. All other samples were pork and bovine meat (acquired in butchers) and drinking water.
