: This study was approved by the Research Center of Colegio Mayor de Antioquia under protocol number FA62. The study was conducted in accordance with established ethical standards and national legislation.
: Participants consented to the use of their testimonies and contributions in academic publications, provided that their anonymity was respected unless they explicitly authorized otherwise. In cases where the use of real names was permitted, verbal consent was recorded during the interview.
: Semi-structured interviews were conducted with participants involved in Colombian culinary traditions. Participants were informed about the purpose of the study, the academic use of their testimonies, and the recording of their contributions. All participants voluntarily gave their consent. The recordings were securely stored, and data were anonymized when necessary to protect participants’ identities.Prior to each interview, participants received clear and detailed information about the study, including its objectives, the use of audio recordings, the voluntary nature of their participation, and their right to withdraw at any time without any consequences. Verbal consent was obtained from each participant and recorded at the beginning of the interview. Participants were assured that their testimonies would be used solely for academic purposes and that their identities would remain confidential unless they explicitly authorized otherwise.
