: Anthocyanin was extracted for this study using red cabbage (Brassica oleracea var. capitata f. rubra) as the plant material. In 2023, red cabbage was purchased from FOODLOVERS, a well-known supermarket in Stellenbosch City, South Africa, renowned for its fresh fruits and vegetables. The purchased red cabbage was inspected and approved for use in this study by the Stellenbosch University research adviser and postharvest laboratory. All national and international ethical guidelines were followed during the study.
