: This study engaged human participants, leading to the approval of ethical guidelines by the University of Cape Coast Institutional Review Board in Ghana, under approval number (UCCIRB/EXT/2024/059). Prior to collecting data, respondents were informed about the consent process to guarantee their confidentiality and anonymity. They were also free to withdraw from the study at any stage if they felt uncomfortable while answering the questions. I am an Assistant Research Scientist on the project on edible insect production and consumption in Ghana: implications for poverty reduction, food security improvement and sustainable development. As part of the project, I am surveying to identify consumer preferences for bread fortified with edible insects in Ghana. Your participation in this research will help us to understand the consumer preferences for edible insect-fortified bread attributes for policy formulation. Your participation in this survey is voluntary, and you are at will to avoid answering questions you are uncomfortable with. You may ask questions about this survey at any time.
