: The study was approved by the Ethical Committee of Shahjalal University of Science and Technology (SUST), Sylhet 3114, Bangladesh, following its presentation to the University Research Ethics Board. This research did not involve any animal handling. The shatkora samples utilized in the study were evaluated by the SUST Research Ethics Board (SREB), which determined that formal approval was unnecessary. Furthermore, all panelists participating in the sensory evaluation of the strawberry jams were fully informed about the study's objectives, procedures, and potential implications. Participation was completely voluntary, and verbal consent was obtained from each panelist before the experiments, as the study involved voluntary human participants. Additionally, our institution confirmed that all ingredients used in the strawberry jam are considered safe and have been classified as GRAS (Generally Recognized as Safe). Therefore, in accordance with institutional guidelines, ethical committee approval was not required for the sensory evaluation.
