: Informed consent was obtained from all individual participants included in the study before sensory evaluation.Prior to participating in the sensory evaluation of caramel candy substituted with mango and pomegranate pectin, all panelists were provided with information detailing the purpose, procedures, and potential implications of the study. The entire panelists in this study were adults from 30 to 50 years old (study not include participants under 18 years) and participated purely on a voluntary basis.
