: The study was approved by the DRC, FET, Sant Longowal Institute of Engineering and Technology (Deemed University), Sangrur, Punjab (INDIA). Before participating in the sensory evaluation of cookies, all panellists were provided with comprehensive information briefly detailing the study’s purpose and procedures. Study was performed in compliance with the ethical standards as laid down in the 1964 Declaration of Helsinki and its later amendments. Panellists were assured that their involvement was voluntary. The verbal informed consent was acceded from each sensory panellist before the evaluation. All the ingredients used in the cookie preparation were food grade with GRAS (Generally Recognized as Safe) status and do not pose any health risk.
