: The millet grains have been cultivated in the Experimental Farm of Giza in the Agricultural Research Center (ARC), Egypt. The grains approved by the Horticulture Research Institute, ARC, and the collections of the plant (2024 season). Human ethical approval for sensory evaluation involving human participants approved by the Alexandria University Research Ethics Review Committee, under approval Alex.Agri152502324 in accordance with the sensorial evaluation relevant guidelines and regulations and all the procedures being performed were part of the routine care. Human participants involving sensory evaluation informed consent was obtained from each subject prior to their participation in the study. The research was carried out following the guidelines of the ethics committee listed in the ethics statement.
