: The rain tree (Samanea saman) pods were collected from the trees at Kwame Nkrumah University of Science and Technology (KNUST), Kumasi. The permission to collect and use the rain tree pods for food research studies was granted by the Grounds & Gardens Section of the Environmental Quality Unit of KNUST (GGSEQU-KNUST). The mature ripe rain tree pods are edible and consumed in Ghana. The are no known local or national rain tree pod guidelines. GGSEQU-KNUST confirmed no need for further approval.
: Informed consent was taken from all sensory evaluators before starting the sensory analysis of the bread samples. No participant was under the age of 16. The sensory evaluators freely took part in the research and were made to understand that the information provided will be treated confidential. The sensory test form/questionnaire used contained ethics statement which was explained to all evaluators. The personal information of the subject would not be shared after the conclusion of the research.
