: In these physical properties analysis study, which involved human participants, was reviewed and approved by the Research Ethics Committee of Universidad de La Sabana. The administrative act corresponds to the 97th session of April 5, 2021, which was held in extraordinary session. This was in accordance with the guidelines established by the Committee. Informed consent was obtained from all participants in the study: they all were aware of the study purpose, risks and benefits. Additionally, this study considered the national (ICONTEC) and international (ISO) protocols and regulations already established for sensory analysis. Finally, the study applied the Colombian Law 1581 of 2012 and its regulatory decrees and, the Data Protection Policy of the Universidad de La Sabana.
