: The sensory analysis was conducted with tasters aged between 18 and 60, who gave informed consent to participate, based on the ethical principles of the National Research Ethics Committee (CONEP). The analysis was approved under Certificate of Presentation of Ethical Appreciation (CAAE) number 60504222.6.0000.0104 by the Permanent Committee on Ethics in Research Involving Human Beings of the State University of Maringá. The raw material used in this study was donated by a banana farmer from Pérola-PR, Brazil, who followed the national cultivation guidelines.
