: The pulse seed varieties have been cultivated in the Experimental Farm of Giza in the Agricultural Research Center (ARC), Egypt. The seeds approved by the Horticulture Research Institute, ARC, and the collection of the used pulse seeds by HRI complied with national standard guidelines and ethics for plants (2023 season). For the sensory evaluation involving human participants, this study adhered to the Helsinki Declaration’s guidelines for human research. Human ethical approval for sensory evaluation involving human participants was confirmed and approved by the Sensory Evaluation Ethics Committee (SEC) of the Food Technology Research Institute, Agricultural Research Center (Date: 08/09/2024, No. SEC-04). All procedures performed were part of routine. All adult, well-trained participants involved in sensory evaluation gave freely-given written informed consent and confirmed to participate according to the guidelines and regulations of the SEC. The study fully complied with the Declaration of Helsinki and national ethical regulations.
