: The study was approved by the Institutional Ethical Committee of Department of Food Science and Nutrition, College of Community Science, Assam Agricultural University, Jorhat Assam (Review Meeting No: 4th IEC) in accordance with the ethical principles outlined in the Declaration of Helsinki. Before conducting the sensory evaluation of the fruit leathers, informed consent was obtained from all participants. Additionally, they were informed that their participation was completely voluntary and that they could withdraw from the study at any time without providing a reason. As the study involved commonly available edible fruits that are not endangered or protected, no specific permissions or ethical approval were required.
