: This study proposal was approved by the Research and Ethical committee of the Department of Food Engineering, University of Maringá, PR, Brazil under protocol No. 82981824.1.0000.0104/2024. The sensory evaluation was carried out in total compliance with the WMA Declaration of Helsinki. The sensory evaluators are regular consumers of burgers and all of them being above 18 years, gave their informed consent to participate in the sensory evaluation with the ability to withdraw from the study at any point in time. We also ensure compliance with the relevant institutional, national and international guidelines and legislation in the collection of the materials used in this study.
