: Approval to conduct this study was obtained from the AMU Institutional Research Ethics Review Board (IRB), reference number IRB-2025-23341, and the research was conducted in accordance with the principles of the declaration of Helsinki. All sensory evaluators were informed of the procedure and signed informed consent prior to conducting the sensory evaluation of the soymilk samples prepared. No participant was under required age, and all evaluators were allowed to participate voluntarily and were told that their information would be kept confidential, and that the test form/questionnaire contained an ethics statement, which they were told about. Personal information of the subject would not be shared following the completion of the study.

: The soybean ( Glycine ma x (L.) Merr.) seeds used in this study were collected in full compliance with applicable local, national, and institutional guidelines governing plant research and agricultural materials. The seeds were obtained from cultivated Southern Agricultural Research Center. No wild, endangered, or protected species were involved in this study. In addition, no special permit was required for the collection of commercially cultivated soybean seeds. Plant identification and authentication were not required as the plant was released by the Agricultural Research Center in Ethiopia, adopted and distributed in Ethiopia. The study adhered to ethical standards concerning biodiversity conservation and responsible use of plant genetic resources.
