: This study was conducted in accordance with the ethical standards of relevant institutional and national research committees. Ethical approval for the sensory evaluation involving human participants was obtained from the School of Nutrition, Food Science and Technology Ethics Committee, Hawassa University, Ethiopia. All procedures complied with the Declaration of Helsinki and institutional guidelines. Written informed consent was obtained from all participants prior to inclusion. Sensory evaluation panelists comprised undergraduate students and staff (aged 20–40 years) from the Department of Food Science and Technology, Hawassa University. Participation was voluntary, and participants were fully informed of the study purpose, procedures, and their right to withdraw at any time without penalty.

: Ensete ventricosum plant materials were collected in compliance with local and national regulations governing research on cultivated plants. Samples were obtained from sources commonly used for food production in Ethiopia. No endangered or protected species were involved.
: Permission to collect and use Ensete ventricosum for research purposes was obtained from relevant local authorities and landowners where applicable. No additional permits or licences were required.
