As the food materials used in the study were already known and consumed by the participants, an informed consent was obtained from them for the sensory evaluation. Verbal consent was witnessed and formally recorded. The anonymity of the participants was guaranteed, as well as the confidentiality of the information collected. In addition, measures were taken to ensure that all participants were neither ill nor allergic to foodstuffs used for the formulations.
