: The consent of research participants/<i>Hausa koko</i> processors was sought by informing them about the research and its benefits. The research did not collect any personal information from participants, but all were given a comprehensive explanation of the entire procedure. There was absolutely no risk and participants were allowed to opt out at any point. Additionally, processors did not suffer any consequences as a result of the data acquired. This study was approved by the Ethics Committee for Basic and Applied Sciences (ECBAS), University of Ghana with certified Protocol Number ECBAS 014/19–20.
