: Permission was obtained through an institutional cooperation agreement to develop the project called "Registration of Culinary Traditions of Riobamba as part of its intangible cultural heritage" between the Polytechnic School of Chimborazo and the Autonomous Decentralized Government of Riobamba and the Pungalá parish.
