: CDF is a Nutrition School nutritionist at the Federal University of Bahia and is currently the coordinator of the unit’s laboratories. ILN is a full professor at the Department of Food Science and Technology/Center of Agricultural Sciences of the Federal University of Santa Catarina, acting in the Graduate Program in Food Science (PPGCAL/UFSC) and as a professor of the Master’s and Doctoral courses in Food, Nutrition and Health of the Nutrition School of the Federal University of Bahia.
